Ingredients
- Ground dates.
- Water, as needed.
- 1 tablespoon oil, added gradually.
- 1 kg toasted semolina.
- A pinch of salt.
- 3 tablespoons honey.
- 400 g soft margarine, up to 500 g if needed.
- Almond pieces for decoration.
Preparing the Date Paste
Start with the ground dates and add one tablespoon of water. Knead well.
If the dates are still dry, add another tablespoon of water. Do not use more than three tablespoons.
Continue kneading until the date paste becomes soft.
Then gradually add the oil. Add half a tablespoon and knead well, then add the other half.
Adding the oil this way helps keep the date paste soft and gives the Kaabouch a delicious, tender texture.
Adding the Toasted Semolina
Add 1 kg of previously toasted semolina.
If you prepared the toasted semolina earlier, warm it slightly before using it. You can warm it gently or place it in the oven while stirring until it becomes warm, but not too hot.
Mix the dates with the semolina and knead thoroughly until everything is well combined.
Adding the Honey and Margarine
Add a pinch of salt, followed by three tablespoons of honey.
The honey is optional, but I like adding a small amount because it gives the recipe a wonderful flavor.
Next, add the soft margarine, about 400 g. You can use more if necessary.
Important: Do not melt the margarine. It should only be soft. If you melt it, the Kaabouch may become too oily and release excess fat.
Continue kneading until you get a soft, cohesive mixture that does not crumble.
Shaping the Kaabouch
You can use any mold you have available.
I used an almond-shaped mold, but you can also shape the mixture into small balls.
If you don’t have a mold, flatten the mixture like a flatbread, then cut it into squares, diamond shapes, or any shape you prefer.
Place the mixture into the mold and press it firmly so that it takes the desired shape.
Decoration
After shaping all the pieces, decorate them lightly with almond pieces.
You can also add a little walnut mixed with honey, according to your preference.
Final Result
This quantity makes a large batch of Kaabouch.
If you want a smaller amount, simply divide all the ingredients in half.
The result is amazing: soft, delicious, perfectly textured Kaabouch that stays soft for a long time.
